#502 – Substitute

I remember being horrified when I realized it wasn’t actually butter that was being squirted onto my popcorn at the movie theater. It suddenly made sense how when I made popcorn at home it would shrivel up from the real butter. The movie popcorn would be soaked in “butter” but remained fluffy and crunchy.

Kinda like when you realize Pringles and Stax aren’t made straight from potatoes, but some mashed potato/corn batter.

Or when you find out that the styrofoam packing material isn’t made from petrol-chemicals, but delicious corn starch.

First time I saw that kind of packing for real, I tossed it into the back yard for the birds, but it rained right after, and they shriveled up. The packing nuggets, not the birds. That would have been cool, though.

Finding out about movie non-butter made me give up butter on popcorn altogether. Saved a calorie or two.

Thanks to the influence of Bloom County, I now refer to movie theatre popcorn butter as “artificial butter-flavored grease”.

Firstly it’s Soy oil, not grease. and secondly if you have ever eaten microwave popcorn, think of how much chemicals and preservatives it requires to give those “made with real butter” packets a shelf life of 5-6 years, and the goop that it’s mixed with that remains a solid until microwaved and when it cools forms a chalky substance on the popped corn. Personally I prefer my soy oil popped popcorn with butter flavoring to eating that stuff…. I work at a movie theater and the only healthier way to make popcorn is in an air popper.

      Yep. I’m a rare bird.

it is the water in the melted butter that makes the popcorn shrivel up like that. If you make clarified butter or use ghee you won’t have that problem.
